1 cup chopped homemade meat loaf
1/2 cup diced bell pepper
1/4 cup diced onion
3 tablespoons grated Parmesan
1 teaspoon olive oil
3/4 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder
1/8 teaspoon pepper
Heat olive oil in a nonstick skillet. Add pepper & onions and cook until softened; about 3-5 minutes. In a saucepan add pasta sauce, meat loaf and seasonings. Add 1/4 cup of water if needed. Stir in rinsed noodles, cover and simmer 20 minutes. Garnish with Parmesan if desired and serve.
Tip: Make leftovers into Meat Loaf Noodle Soup by adding broth.
