Easy Low Carb Pot Roast & NoodlesServes 8
 
3 1/2 lb boneless chuck roast, trimmed of all fat
10 oz pkg mixed frozen veggies
1 cup water
garlic powder & pepper to taste
 
Preheat oven to 325 F.  Coat a casserole dish with cooking spray.  Season roast with pepper and garlic powder and place in casserole dish. Rinse noodles and spread over roast.  Pour in soup and water. Cover with foil and bake 2 hours.  Add veggies & rinsed noodles and bake 30 minutes. Serve with gravy over the noodles.

Slow Cooker:  Add all ingredients and cook 6 hours.  Season well and then serve.
