1/2 lb sweet Italian sausage
1 cup canned plum tomatoes
1/2 medium onion, chopped
1/2 cup burgundy wine
1/2 cup water
2 cloves garlic, chopped
2 teaspoons sugar
1/2 teapoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
This is a sweet, tangy and different pasta sauce that will make you sit up and take notice! Brown the sausage in a large nonstick skillet; drain fat. Add onion & garlic and cook 15 minutes. Add to a large blender
with tomatoes and tomato paste. Blend until fairly smooth.
Add wine to the skillet and cook until reduced in half. Stir in the sauce, sugar and spices. Cover and simmer 45 minutes, stirring occasionally. Serve over hot Skinny Dip Noodles and garnish with Parmesan if desired.
Tip: If you prefer not to use wine add 1 tablespoon cider vinegar to the blender ingredients.
You can also swap artificial sweetener for the sugar (subtract 2 carbs).
