Skinny Dip Spicy Shrimp Noodle BowlServes 4

1 lb tail-on medium shrimp, peeled
1 1/2 cups water
1 cup chicken broth 
1 cup clam juice
1/2 cup sugar snap peas
1/2 red bell pepper, thinly sliced
1/4 red onion, thinly sliced
2 cloves garlic, minced
3 tablespoons chopped cilantro
1 tablespoon minced fresh ginger
1 teaspoon oil
1/2 teaspoon crushed red pepper
1/4 teaspoon salt

Remove shrimp tails and set aside. Combine shrimp tails, water, clam juice & ginger in a saucepan.  Bring to a boil, reduce heat and simmer 10 minutes.  Strain broth through a sieve into a bowl and discard solids.

Heat oil in a saucepan over medium heat. Add bell pepper, onion and garlic.  Sauté 3 minutes. Add reserved broth and bring to a simmer. Add shrimp, sugar snap peas, chili garlic sauce, salt and noodles. Cook 5 minutes, then ladle into 4 bowls. Top with cilantro and serve with lime wedges.
