Gluten Free Swedish MeatballsServes 4
2 bags Skinny Dip Noodles, any shape
1 lb extra lean ground beef
2 green onions, finely chopped
2 oz low fat Cheddar cheese (not pre-shredded)
1/4 cup grated Parmesan cheese
1 egg white, lightly beaten
1/4 teaspoon garlic power
1/4 teaspoon onion powder 
1/8 teaspoon pepper
2 oz light cream cheese
1 clove garlic, minced
1 teaspoon cornstarch
salt and pepper to taste
Shred cheese. Mix meatball ingredients.  Form 12 mini-meatballs.  Cook in a nonstick skillet and turn often to brown evenly.  Remove to a plate. Whisk together cornstarch and beef consomme in a small mixing bowl.  Add to meatball skillet and stir in cream cheese until melted. Season to taste. Rinse noodles and stir into gravy.  Add meatballs and cook 10 minutes before serving.
Tip:  Shred the cheese yourself.  Pre-shredded cheese contains flour to prevent clumping.
