3/4 lb extra lean ground beef
1 cup Southwest Eggbeaters
1 cup shredded low fat Cheddar cheese
1/4 cup light cream
3 tablespoons light sour cream (optional)
1/4 cup chopped red bell pepper
2 green onions, sliced thin
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Drain and rinse noodles. Chop small and set aside. Preheat oven to 350 F. Coat 9" nonstick pie pan
with cooking spray.
Brown ground beef in a large nonstick skillet and add bell pepper. Drain fat and spread on the bottom of the pie pan. Stir Egg Beaters, cream, green onion, sour cream and spices in a bowl. Stir in noodles and pour over beef.
Sprinkle cheese over the top. Bake 35-40 minutes or until set. Let sit 5 minutes and serve.
