7 Carb Szechuan Chicken With Skinny Dip Noodles Rice PearlsServes 4

2 bags 0 Calorie Skinny Dip Rice Pearls
1 lb boneless chicken breast, sliced thin
1 green bell pepper, chopped
1 carrot, sliced thin diagonally
2 cloves garlic, minced
2 tablespoons roasted peanuts w/o salt (omit to cut carbs)
1 tablespoon grated raw ginger
1 tablespoon peanut oil (for high heat stir frying)
black pepper and onion powder

Sauce
1/2 cup low sodium chicken broth
1 tablespoon hoisin sauce, divided
1 tablespoon rice vinegar
2 teaspoons cornstarch
2 teaspoons brown sugar, packed
1 teaspoon Sriracha hot sauce (optional)

Rinse and drain rice pearls and place in microwave safe bowl to heat before serving. Season chicken generously with pepper and onion powder. Whisk sauce ingredients in a bowl; let sit.  Heat oil in a nonstick wok or nonstick skillet on medium high 3 minutes. Add chicken and stir fry 3 minutes. Add ginger and garlic, cook 30 seconds. Add bell pepper, carrots, and peanuts. Stir fry 2 minutes. Add sauce mixture and cook, stirring constantly, until boiling. Serve over 0 carb rice pearls.

Tip: Raw ginger is cheap. Peel, grate, and freeze leftovers to break off as needed.
