2 oz fresh boneless pork chop, julienned
1⁄4 lb firm tofu, diced
1 egg, lightly beaten
1⁄4 cup dried wood ear or shitake mushrooms
1⁄4 cup canned bamboo shoots, julienned  (Asian aisle)
1 green onion, thinly sliced
1 tablespoon grated fresh ginger
1 tablespoon cornstarch
1⁄4 cup water

Broth

4 cups low sodium chicken broth
1/4 cup white vinegar
3 oz low sodium soy sauce
1 teaspoon toasted sesame oil (Asian aisle)
1/2 teaspoon white pepper
1/2 teaspoon cayenne pepper
1⁄8 teaspoon garlic powder

This authentic recipe is best you've ever had! Mix cornstarch and water in a small dish. Rinse noodles and chop small. Soak mushrooms in warm water for 20 minutes, then cut into small pieces. Bring chicken broth to a boil, add pork and cook 3 minutes. Add soy sauce, sesame oil, vinegar and spices. Add tofu, mushrooms and bamboo. Stir in noodles. Add cornstarch mixture slowly while stirring. Drizzle egg in slowly while stirring. Cook 2 minutes until hot. Ladle into bowls and garnish with green onion.
