Gingered Chicken & Noodles September 18 2012

Gingered Chicken and NoodlesServes 4
 
1 bag Skinny Dip Noodles, any shape
1 lb medium shrimp or cubed chicken breast
1 medium carrot, cut into matchsticks
1 cup broccoli florets
1/2 medium red bell pepper, cut into thin strips
2 green onions, chopped
2 cloves garlic, chopped or grated
2 teaspoons grated fresh ginger
2 tablespoons oil
 
Rinse, drain and dab noodles with paper towels to dry well.  Place in medium heatproof bowl.  In a medium nonstick skillet heat 1 tablespoon oil and add garlic and ginger.  Heat 30 seconds then stir into noodles and let sit.
 
Add remaining oil to skillet and add chicken or shrimp.  Season generously and cook 2 minutes.  Add veggies and stir together with chicken or shrimp.  Cook 2-3 minutes or until veggies are tender crisp.  Stir noodles into the skillet and toss to mix then serve.
