Shrimp Broccoli Lo Mein August 11 2012

Shirataki Shrimp Lo MeinServes 4

2 bags Skinny Dip Angel Hair 
1 lb raw peeled medium shrimp
2 cups raw broccoli florets
3 cloves garlic, minced
1 hot red chile, minced
1 tablespoon minced raw ginger
3/4 cup fish or chicken broth
1 tablespoon fish sauce
1 teaspoon cornstarch

Rinse and drain noodles.  Pat dry with paper towels.  Heat a medium nonstick skillet on high and add noodles.  Spread them out and let cook until they make a "hissing" sound and start to shrink a bit.  Let sit.

Spray a wok generously with cooking spray. Heat over high heat until hot. Add shrimp and stir fry 3 minutes. Remove shrimp and set aside.

Add ginger & garlic to wok and cook 30 seconds. Add broccoli, chile and 1/4 cup broth.  Cover and cook 2 minutes or until broccoli is tender crisp.

In small bowl mix 3/4 cup broth, fish sauce and cornstarch with a whisk until smooth. Return shrimp to wok and add cornstarch mixture. Cook 1 minute until sauce is slightly thickened. Stir in noodles and cook 3 minutes or until hot.
