1 Pot Cheesy Chicken and Rice October 29 2015

6 Carb Cheesy Chicken and Rice with Skinny Dip Noodles Rice PearlsServes 4

2 bags Skinny Dip 0 Calorie Rice
8 oz boneless chicken breast, cubed
3 oz Velveeta Light, cut into 1" pieces
3 cups small broccoli florets
1/2 cup chopped green onions
2 tablespoons sliced almonds (optional)
1 tablespoon oil

Drain and rinse rice, let sit. Steam broccoli 5 minutes or until barely tender. Season chicken as desired. Heat oil in a nonstick skillet. Cook chicken 5 minutes or until done. Add rice, onions and cheese to chicken. Stir until cheese melts, then stir in broccoli. Cook 2 minutes or until hot. Sprinkle with almonds and serve.
