Instant Mexican Fideo SoupServes 2

1 bag Skinny Dip Angel Hair, chopped
4 cups low sodium chicken stock
2 tablespoons minced onion
1 clove garlic, minced
2 cubes tomato bouillon
1 tablespoon oil
1 teaspoon ground cumin or taco seasoning
chopped cilantro (garnish)

Heat oil in a large saucepan.  Add onion & garlic and cook 1 minute.  Stir in chicken stock, cumin and bouillon cubes.  Cook 5 minutes, add noodles and simmer 5 minutes. Season and garnish with cilantro before serving.
