Low Carb Vietnamese Soba SoupServes 4
2 bags Skinny Dip Angel Hair, drained & chopped
10 oz round steak, sliced very thin
14 oz can beef broth
1/4 cup rice vinegar
1/4 cup thin sliced green onion
2 tablespoons soy sauce
2 teaspoons grated fresh ginger
2 teaspoons sesame oil
2 teaspoons honey
1/8 teaspoon white pepper
In a medium bowl mix rice vinegar, soy sauce, ginger, sesame oil, honey and white pepper. Add steak, toss to coat and let sit for 30 minutes.
Bring noodles to a full boil in the beef broth. Add steak and green onions. Cook 2 minutes. Garnish with chopped mint or cilantro and serve.
