2 bags Skinny Dip Noodles, any shape
1 lb extra lean ground beef
1 cup frozen mixed vegetables
2 ramen seasoning packets OR 1 pkg beef stew spice mix
1/2 cup water
seasoned salt & pepper
Stir together ramen seasoning or stew seasoning with water in a small bowl.  Drain & rinse noodles, then stir into seasonings, let sit.
Brown ground beef in a medium nonstick skillet until no longer pink.  Drain fat, then add veggies and noodle mixtures.  Stir together, cover and cook 5 minutes.  Stir again and season generously to taste.  Uncover and cook 5 minutes more until hot and serve.
Tip:  Lower the carbs by choosing lower carb frozen veggies.
