Low Carb Asian Beef and Snow PeasServes 2
 
1 bag Skinny Dip Rice Pearls, or any noodle shape
1/2 lb round steak, cut into thin strips
10 snow peas, sliced in half diagonally
1/4 medium red bell pepper, cut into strips
3 tablespoons soy sauce
1 tablespoon red or white wine
1 tablespoon brown sugar
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
2 teaspoons vegetable oil
1/2 teaspoon cornstarch
 
In a bowl mix soy sauce, rice wine, brown sugar and cornstarch.  Rinse and drain noodles.  Dab with paper towels to dry and add to sauce bowl. Heat oil in a stir fry skillet over high heat. Stir fry ginger and garlic 30 seconds. Add steak and stir fry 2 minutes or until browned. Add snow peas & bell pepper and stir fry 3 minutes. Stir in noodles and simmer until sauce is thickened.
