Parmesan Meatballs & Alfredo SauceServes 4

2 bags Skinny Dip Fettuccini
1 lb ground beef
1/3 cup grated Parmesan cheese
1 egg, beaten
1 garlic clove, minced
Alfredo Sauce
3/4 cup heavy  cream
3/4 cup grated Parmesan cheese
3 tablespoons I Can't Believe It's Not Butter Light
1 tablespoon flour
1/4 teaspoon garlic salt
1/8 teaspoon pepper
A delicious high calorie dish for special occasions!  Mix meatball ingredients and shape into 12 balls. Cook over medium high heat in a nonstick skillet until cooked through, turning occasionally.
Melt the margarine in a large saucepan over medium low heat.  Whisk in the flour and cook 1 minute.  Slowly whisk in the cream.  Sprinkle in the cheese while stirring until smooth. Simmer on very low heat until thickened. Do not let it boil!  Season with garlic salt and pepper.
Drain and rinse the fettuccini.  Stir into the saucepan.  Add meatballs and mix to coat with sauce. Serve with 3 meatballs per person.
