Low Carb Bloody Mary SoupServes 6
1 bag Skinny Dip Noodles, any shape, chopped
2 10-oz cans double strength beef consomme
1/2 cup vodka
2 cups canned petite diced tomatoes
2 celery stalks, sliced
1/2 medium red onion, chopped
2 garlic cloves, chopped
3 tablespoons Kraft Light Italian Dressing
2 tablespoons Worcestershire sauce
2 teaspoons Tabasco sauce
salt and pepper to taste
Place the tomatoes, consomme, onion, garlic and celery in a blender.  Blend until veggies are a smooth paste.  Press the mixture through a strainer into a large bowl and stir in Italian dressing, Worcestershire sauce, Tabasco and vodka.  Add salt and pepper to taste. Stir in rinsed Rice Pearls and serve hot or cold.
Tip:  Lower the sodium by choosing low sodium beef consume and no-salt added tomatoes.
