1 bag Skinny Dip Rice Pearls, or any shape
1 lb extra lean ground beef
3 thin slices bacon, diced
3/4 cup shredded mozzarella cheese
1 cup salsa or canned diced tomatoes
1/4 cup water
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/4 cup sliced black olives
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1 teaspoon salt
Drain and rinse rice pearls. Place in a small bowl and stir in salsa and Italian seasoning, let sit. Cook bacon and beef in a nonstick skillet until cooked through. Add onion, bell pepper, garlic and salt. Cook 5 minutes and drain.
Stir in water, rice pearls and olives. Heat to boiling, reduce heat and cook on low until extra liquid evaporates. Sprinkle with cheese, cover and let sit 2 minutes or until cheese melts then serve.
