3 bags Skinny Dip Rice Pearls
8 oz Farmer John sage sausage
1 cup shredded part skim mozzarella cheese
1 cup sliced mushrooms, rough chopped
1 cup diced celery
1/2 cup diced onion
2 tablespoons chopped walnuts
1 tablespoon diet margarine
1 tablespoon dried poultry seasoning
1 teaspoon chicken broth granules
1/2 teaspoon salt
1/4 teaspoon black pepper
Drain and rinse rice pearls. Drain and dab with paper towels to dry and place in a mixing bowl.
Brown sausage while breaking it apart with a spatula; drain. Add sausage to rice pearls and sprinkle with poultry seasoning. Toss to mix evenly.
Melt margarine in a large nonstick skillet. Add broth granules, celery, onions & mushrooms and saute 3 minutes. Add walnuts, rice pearl mixture, salt and pepper. Cook 10 minutes or until liquid has evaporated. It should be fairly dry.
Sprinkle with cheese and stir to mix. Cover and let sit 2 minutes before serving.
