Low Carb Sweet Cashew ChickenServes 4
2 bags Skinny Dip Angel Hair, or any shape
1 lb chicken boneless thighs, no skin, diced
1/2 cup sliced celery
1/2 cup chopped bell pepper
1/4 cup chopped onion
1/4 cup thinly sliced carrots
1 oz salted cashews (about 18)
1 1/2 tablespoons Kikkoman Sweet & Sour Sauce
1/2 cup chicken broth
1 teaspoon cornstarch
Spray large nonstick skillet with nonstick cooking spray. Add chicken and cook over medium heat for 5-7 minutes or until browned.  Add celery, carrots, onion, bell pepper & broth and cook 5 minutes or until veggies are tender crisp and broth has evaporated.  
In a small bowl blend water and cornstarch. Stir into the skillet and cook until thickened, about 1 minute.  Stir in sweet & sour sauce and cashews.  Season with salt & pepper to taste.  By adding the sauce at the last minute you only need a small amount for a "sweet" taste!
Drain, rinse and boil noodles for 1 minute.  Drain again and dry very well.  Arrange noodles on plates and spoon chicken mixture on top.
