Creamy Cheddar & Rice Pearls SoupServes 6
2 bags Skinny Dip Rice Pearls
4 cups vegetable broth
1 cup Bud Select low carb beer (or 5 cups broth)
2 cups frozen chopped broccoli
1 medium onion, chopped
2 garlic cloves, minced
8 medium mushrooms, quartered
2 cups shredded low fat sharp Cheddar cheese
1/2 cup sour cream
2 tablespoons diet margarine
2 teaspoon cornstarch
1 teaspoon seasoned salt
1 teaspoon hot pepper sauce
1/2 teaspoon black pepper
Melt margarine in medium nonstick saucepan over medium low heat.  Add onion & garlic and cook until softened, about 3 minutes.  Stir in the mushrooms and broccoli.  Stir in the beer, Tabasco sauce, sour cream and cheese.  Stir broth and cornstarch together in a bowl, then pour into the soup while stirring.
Drain rice pearls and add to the soup.  Cook 10 minutes, add seasoned salt and pepper to taste and serve. This recipe makes very substantial servings! Spread a little garlic butter on Skinny Dip 0 Carb Bread and grill so you can dip it!
