Simple Coconut Curry SoupServes 3
 
1 bag Skinny Dip Angel Hair
2 1/2 cups chicken stock
1 1/2 cup unsweetened lite coconut milk 
1 medium carrot, chopped fine
1/3 cup minced onion
2 tablespoons Thai yellow curry paste 
2 tablespoons fresh lemon or lime juice
1 tablespoon oil
2 teaspoons curry powder
1 teaspoon salt
1/8 teaspoon white pepper
 
Heat oil in a medium nonstick saucepan.  Stir in curry paste & onion and cook until fragrant, about 1 minute.
 
Whisk in chicken stock, carrots & curry powder and bring to a boil. Whisk in coconut milk and cook until simmering (don't boil).  Stir in lemon or lime juice, salt and white pepper.  Cook 1 minute while stirring.  
 
Drain and rinse the noodles.  Divide noodles and soup between 3 bowls and serve.  Boost your protein intake by adding small shrimp or cubed chicken during the last 5 minutes of cooking.
