Italian Chicken & Rice Pearl SoupServes 4
1 bag Skinny Dip Rice Pearls
8 oz boneless chicken breast, cubed
4 cups chicken broth
2 cups chopped fresh spinach
1 stalk celery, diced
2 green onions, sliced thin diagonally
1/2 medium carrot, diced
1/2 cup canned chopped tomatoes
2 cloves garlic, minced
2 tablespoons grated Parmesan cheese
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
Add 3 cups chicken broth, veggies, Parmesan and spices to a large stockpot.  Bring to a boil, reduce heat and simmer 15 minutes.  Stir in chicken. In a small bowl stir together 1 cup chicken broth and cornstarch.  Stir mixture into soup.  Drain, rinse and add rice pearls.  Simmer soup 5-10 minutes or until thickened and ladle into heated bowls.
