Spicy Orange Chicken & RiceServes 4
 
2 bags Skinny Dip Rice Pearls, or any shape chopped
1/2 lb chicken breast tenders
2 cups stir fry veggies (peppers, snow peas & broccoli)
1/4 cup Low Sugar Orange Marmalade
3 teaspoons oil, divided
3 teaspoons soy sauce, divided
1 teaspoon grated fresh ginger
1/4 teaspoon crushed red pepper flakes
white pepper & salt to taste
 
Stir marmalade, 1 teaspoon oil, 2 teaspoons soy sauce, ginger and pepper flakes in a bowl; let sit.  Heat remaining oil in a nonstick skillet over high heat. Add chicken and 1 teaspoon soy sauce. Stir fry chicken until no longer pink. Add veggies and stir fry 3 minutes.  Add sauce mixture and sprinkle with white pepper.  Heat 5 minutes and serve over hot Skinny Dip Rice Pearls.
