Tuscan Tuna PomadoroServes 2
1 bag Skinny Dip Fettuccini, or any shape
5 oz can tuna packed in water, drained & flaked
1 cup canned diced tomatoes, drained
1/2 stalk celery, finely chopped
8 medium green olives, quartered
2 cloves garlic, finely chopped
1 green onion, sliced thin (white part separated)
2 teaspoons olive oil
1/2 teaspoon dried Italian seasoning
1/8 teaspoon pepper
seasoned salt to taste 
Heat oil in a small nonstick skillet over medium heat.  Cook celery, white part of green onion and garlic for 2 minutes.   Stir in tuna, tomatoes, green onion tops, olives and pepper. Cook 5 minutes, then add seasoned salt to taste.  Drain and boil noodles 1 minute.  Drain again very well and arrange on plates.  Spoon tuna mixture over the top and serve.
