2 bags Skinny Dip Angel Hair
3/4 lb boneless chicken breast, cut into thin strips
2 cups shredded Napa cabbage
2 green onions, chopped into 1" pieces
1 cup fresh sliced mushrooms
4 cloves garlic, minced
1 tablespoon fresh grated ginger
2 tablespoons sesame oil
2 tablespoons corn oil
1/2 teaspoon pepper
1/3 cup soy sauce
In a large bowl combine the soy sauce and sesame oil. Drain, rinse and boil noodles 1 minute. Drain again very well and dab with paper towels to dry, then add to the bowl and toss to coat, let sit.
Heat corn oil in a large nonstick skillet
over high heat until rippling. Sprinkle chicken generously with salt and pepper, then add to the skilletand stir fry until golden, 3-4 minutes.
Add cabbage, green onion, mushrooms, garlic and ginger and cook 2 minutes. Season generously with salt & pepper and keep warm. Add noodles to the skillet and toss to mix everything. Cook 2-3 minutes or until noodles are hot, then serve.
