Thai Pork Noodle SoupServes 2
 
1 bag Skinny Dip Noodles, any shape
1/2 lb boneless pork tenderloin, cubed
3 cups water +1 tablespoon beef broth powder OR
3 cups beef broth
1/3 cup thin sliced carrot
1/3 cup chopped red bell pepper
1 cup fresh spinach leaves
2 cloves minced garlic
1 tablespoon soy sauce
1 tablespoon diet margarine
2 teaspoons grated raw ginger
fresh lime juice to taste (optional)
 
Melt margarine in large nonstick saucepan.  Saute ginger and garlic for 1 minute.  Add pork and saute 3-5 minutes or until lightly browned.  Stir in broth, water, soy sauce, carrot and bell pepper. Heat to boiling and simmer 5 minutes. Stir in noodles & spinach and simmer 5 minutes.  Add lime juice to taste before serving.  Also works great with beef or fish.
