Skinny Dip Italian ChickenServes 2
1 bag Skinny Dip Angel Hair
1/2 lb boneless chicken, cubed
1/2 small red bell pepper, sliced
1/2 small onion, sliced
1/2 small yellow zucchini, sliced
1/2 cup sliced fresh mushrooms
2 tablespoons light Italian salad dressing
2 tablespoons chicken broth
1/2 teaspoon cornstarch
1/2 teaspoon garlic powder
1/4 teaspoon dried Italian seasoning
Stir together dressing, broth, Italian seasoning, cornstarch, garlic powder and a shake of salt and pepper. Pour into a resealable bag. Add chicken, squeeze out air and marinate 15 minutes.
Coat a nonstick skillet with cooking spray over medium heat.  Add veggies and saute until they begin to caramelize.  Stir in chicken with marinade.  Cover and cook 10 minutes.  Serve with sauce over hot Skinny Dip Noodles (or add the noodles to the skillet to soak up flavors!)
