Low Carb Chicken Rice SkilletServes 2
1 bag Skinny Dip No Calorie Rice Pearls
6 oz boneless chicken breast, cubed
2/3 cup shredded low fat Cheddar cheese
1 1/2 cups frozen broccoli, peppers & mushrooms
1 clove garlic, minced
1/2 cup low sodium chicken broth or water
3 tablespoons light sour cream
Coat a nonstick skillet with cooking spray or a Misto.  Cook chicken and garlic 3 minutes.  Remove chicken.  Add sour creamc and broth to skillet. Stir until blended.   Drain rice pearls and add to skillet with chicken, veggies and pepper. Cook until mixture is creamy. Add cheese and cook until melted. Season to taste and serve.
