Low Carb Chicken Noodle SoupServes 2

1 bag Skinny Dip Angel Hair, or any shape
4 oz boneless chicken breast, cubed
1/2 cup canned diced tomatoes (basil & oregano)
1 stalk celery, sliced
1/2 carrot, chopped
1/4 small onion, chopped
1/8 cup frozen baby peas
1 clove garlic, minced fine
1 1/2 cup water (or 1 cup water + 1/2 cup white wine)
2 teaspoons diet margarine
2 teaspoons chicken broth granules
1 teaspoon dried thyme leaves

Melt margarine in a medium saucepan.  Saute onion and garlic over medium heat 1 minute.  If using wine then add now simmer until reduced by half.  Add the rest of the ingredients except the noodles.  Simmer 10 minutes then check seasonings.  Drain noodles and add to soup.  Cook 2-3 minutes or until hot and serve.
