Easy Low Carb JambalayaServes 4
 
2 bags Skinny Dip Rice Pearls, rinsed & drained
6 oz boneless chicken breast, cubed
6 oz medium shrimp, cleaned
4 oz turkey kielbasa sausage, sliced
1 cup canned diced tomatoes, with juice
1/2 cup water
1/2 green bell pepper, diced
1/2 small onion, diced
1 stalk celery, diced
2 cloves garlic, minced
1/2 teaspoon Cajun seasoning
1/8 teaspoon cayenne pepper
 
In a nonstick skillet add all ingredients except shrimp.  Cook on medium heat for 30 minutes.  The last 5 minutes add shrimp so they don't overcook.  Taste for seasonings and add salt or pepper as needed before serving.
