Skinny Rum Raisin TapiocaMakes 8 Servings

1 cup Skinny Dip Rice Pearls 
2 1/2 cups lowfat milk
2/3 cup dark raisins
1/2 cup granulated Splenda
2 tablespoons cornstarch
2 tablespoons rum OR 1 teaspoon rum extract
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon salt

Drain, rinse and boil rice pearls for 1 minute.  Drain again very well.  Add rice pearls and rum in a small bowl, let sit 5 minutes.  In a saucepan mix cornstarch, vanilla, cinnamon & salt.  Stir in milk and rice pearls.  Cook 3 minutes while stirring until mixture starts to thicken. 
 
Let cool 30 minutes, then stir in Splenda (this prevents heat from changing the taste).  Place plastic wrap over the surface to prevent skin from forming.  Refrigerate until firm, then spoon into 8 dessert dishes and serve.

Tip:  The rice pearls cut the calories and carbs of this dessert in half!
