Hot and Sour Noodle SoupServes 2

1 bag Skinny Dip Fettuccini, or any shape
2 10-oz cans double strength beef broth OR
3 cups water + 1 tablespoon beef broth granules
1 clove garlic, minced
3 tablespoons soy sauce, or to taste
3 tablespoons vinegar, or to taste
1/16 teaspoon white pepper, or to taste

Optional Add-Ons

1/4 cup diced cooked chicken or pork
1/4 cup lite silken tofu, sliced thin
1/4 cup bean sprouts
1 chopped fresh cilantro
1 tablespoon cornstarch (for thickening)
.
Drain, rinse and chop noodles.  Add all ingredients to a large saucepan and heat on medium until simmering.  Cook 5 minutes or let sit overnight and reheat briefly.  White pepper makes all the difference, but black pepper is OK.  Add extra vinegar for more "sour".
