2 bags Skinny Dip Fettuccini
1/2 cup orange juice
1/2 cup Walden Farms Orange Marmalade
1/4 cup white wine
4 oz can mandarin orange sections, drained
1/4 cup toasted slivered almonds
1 teaspoon diet margarine
Drain, rinse and boil noodles for 1 minute. Drain again very well and dab with paper towels so sauce will stick better. Spoon noodles into a medium mixing bowl. Add marmalade and toss to coat well, let sit.
Melt margarine In a large nonstick skillet over medium high heat. Add orange juice and wine. Simmer until mixture is reduced by half. Add noodles and toss to coat with sauce. Refrigerate until chilled. Garnish with mandarin oranges and almonds before serving.
