Makes 30 Cookies .
1 cup Skinny Dip Rice Pearls
2 cups Jif No Sugar Added Peanut Butter
3/4 cup dried coconut
(no added sugar)
3/4 cup granulated Splenda
1 egg + 2 egg whites, lightly beaten
1/4 cup crushed peanuts
1/4 cup Sugar Free Butterscotch Syrup
1/2 teaspoon vanilla extract
1/8 teaspoon salt .
Preheat the oven to 350 F. Coat a 9x13 baking sheet with cooking spray or use a Silpat silicone liner
so cookies don't break when you remove them. Mix Rice Pearls with peanut butter and eggs. Add other ingredients. Drop 30 spoonfuls on the baking sheet. Press light criss-crosses with a fork. Bake 15 minutes or until light brown. Let cool 5 minutes before moving to a cooling rack
