3 Carb Thai Beef Noodle Soup with Skinny Dip NoodlesServes 2 (very generously!)

1 bag zero carb gluten free Skinny Dip Noodles, any shape
6 oz boneless sirloin steak
3 cups low sodium beef stock
1/4 onion, diced
1/2 cup bean sprouts
1/2 red jalapeno, sliced
2 star anise pods (look in the spice aisle)
1/4 cup torn fresh basil
1 tablespoon fresh grated ginger
1 teaspoon fish sauce
1 teaspoon oil
1/4 teaspoon ground cinnamon
1/8 teaspoon garlic powder

This easy soup makes a light meal on its own or truly something different to serve company!  Slice steak thin against the grain. Heat oil in a large saucepan. Add onion and ginger. Cook 1 minute. Add stock, cinnamon, star anise, jalapeno, garlic powder and 1 cup water. Bring to a boil, reduce heat and simmer 15 minutes. Add steak, noodles, bean sprouts and fish sauce.  Cook 2 minutes and garnish with basil before serving.
