2 Carb Cheesy Taco Pasta Casserole April 28 2015

Low Carb Pasta Taco Bake with Skinny Dip NoodlesServes 6

2 bags No Carb Skinny Dip Noodles, any shape
1 lb extra lean ground beef
1 pkg taco seasoning mix
1/2 cup water
1 1/2 cups shredded lowfat Mexican blend cheese
4 oz lite cream cheese, cubed
2 green onions, sliced thin (save some for garnish)
1/2 teaspoon pepper

Preheat oven to 375 F. Coat 9x9" baking dish with cooking spray. In a heavy nonstick skillet brown ground beef and drain. Rinse noodles, chop and add to pan. Stir in taco seasoning, water, onion and pepper.  Stir in cream cheese and 1 cup shredded cheese. Spoon into baking dish. Top with remaining cheese and green onion. Bake uncovered 30 minutes. Let sit 5 minutes and serve.
