2 bags Skinny Dip Angel Hair, or any shape
4 boneless chicken thighs, cubed
3/4 cup canned diced tomatoes
1/2 cup chicken broth
1/3 cup white wine (optional but really good)
1/2 cup sliced mushrooms
1/4 medium carrot, diced fine
1/2 medium onion, diced fine
2 garlic cloves, minced
2 teaspoons diet margarine
1/2 teaspoon dried Italian seasoning
salt & pepper to taste
Drain and rinse noodles in a colander. Chop into bite size pieces. Season chicken generously with salt & pepper.
Melt margarine in a medium nonstick skillet. Add onion & garlic and saute until softened, about 3 minutes. Add wine and cook until reduced by half. Add veggies, tomatoes, chicken broth and spices. Cook 2 minutes, then add chicken. Spoon sauce over the chicken, cover and cook 15 minutes. Remove chicken to a platter and keep warm. Season sauce with salt & pepper to taste.
Drain and rinse noodles. Chop into smaller pieces if desired and stir into the skillet. Add chicken and cook on low 5-10 minutes or until most of the liquid has evaporated and chicken is done.
