Skinny Dip Chicken CacciatoreServes 4
 
2 bags Skinny Dip Angel Hair, or any shape
4 boneless chicken thighs, cubed
3/4 cup canned diced tomatoes
1/2 cup chicken broth
1/3 cup white wine (optional but really good)
1/2 cup sliced mushrooms
1/4 medium carrot, diced fine
1/2 medium onion, diced fine
2 garlic cloves, minced
2 teaspoons diet margarine
1/2 teaspoon dried Italian seasoning
salt & pepper to taste
 
Drain and rinse noodles in a colander.  Chop into bite size pieces.  Season chicken generously with salt & pepper.
 
Melt margarine in a medium nonstick skillet.  Add onion & garlic and saute until softened, about 3 minutes.  Add wine and cook until reduced by half.  Add veggies, tomatoes, chicken broth and spices.  Cook 2 minutes, then add chicken.  Spoon sauce over the chicken, cover and cook 15 minutes.  Remove chicken to a platter and keep warm.  Season sauce with salt & pepper to taste.
 
Drain and rinse noodles.  Chop into smaller pieces if desired and stir into the skillet.  Add chicken and cook on low 5-10 minutes or until most of the liquid has evaporated and chicken is done.

Skinny Dip 4 Carb Macaroni & CheeseServes 4

2 bags chopped Skinny Dip Fettuccini, or any shape
1 cup shredded low fat Cheddar cheese
1 cup shredded low fat Swiss cheese
1/4 cup grated Parmesan cheese
1/2 cup cream
1/2 cup water
2 tablespoons flour
2 tablespoons diet margarine
1 tablespoon minced onion 
1 teaspoon mustard
1 teaspoon salt
1/2 teaspoon cayenne pepper & black pepper

Preheat oven to 350 F.  Coat 9x9" baking dish with cooking spray.  Rinse and drain the noodles in a colander then chop into bite size pieces.  Stir cheeses together and save 1/3 cup for topping.

Melt the margarine in a large nonstick saucepan on low heat.  Add the flour and stir continually for 1 minute to make a roux. Slowly stir in the cream and water until smooth. Cook until thickened, about 2 minutes, but don't let it boil.  Stir in the cheeses, onion, mustard and spices

Stir in noodles, pour into the baking dish and sprinkle reserved cheese over the top.  Bake until golden and bubbly, about 20-30 minutes. Let rest 5 minutes to firm up before serving.

15 Minute Chicken AlfredoServes 4
 
2 bags Skinny Dip Fettuccini, or any shape
1 lb boneless chicken breasts, cubed
1 cup Classico Light Alfredo Sauce
2 slices low fat Swiss cheese
2 tablespoons grated Parmesan cheese
1 teaspoon chicken broth powder or 1 cube
1/4 teaspoon garlic powder
 
Add Alfredo sauce, Parmesan, broth powder and garlic powder to a saucepan.  Bring to a simmer while stirring.  Add chicken and cook 5 minutes. Add Swiss cheese and cook until cheese melts.  Season to taste and serve over hot Skinny Dip Fettuccini.

Garlicky Lemon Chicken NoodlesServes 4

1 lb boneless chicken breast, no skin
4 tablespoons I Can't Believe It's Not Butter Light
2 tablespoons fresh lemon juice
1 tablespoon water
2 cloves garlic, minced
1/2 teaspoon chicken broth powder
1/2 teaspoon dried oregano
1/4 teaspoon onion salt
1/8 teaspoon pepper

Melt margarine in a medium nonstick saucepan.  Stir in lemon juice, oregano, salt and pepper.  Add chicken and cook 4-5 minutes while stirring to coat with sauce.  Season to taste with onion salt and pepper.  Serve with sauce over hot Skinny Dip Noodles.

Spicy Orange Chicken & RiceServes 4
 
2 bags Skinny Dip Rice Pearls, or any shape chopped
1/2 lb boneless skinless chicken breast tenders
2 cups stir fry veggies (peppers, snow peas & broccoli)
4 tablespoons Smuckers Low Sugar Orange Marmalade
3 teaspoons oil, divided
3 teaspoons soy sauce, divided
1/2 teaspoon minced fresh ginger
1/4 teaspoon crushed red pepper flakes
white pepper & salt to taste
 
Whisk together marmalade, 1 teaspoon oil, 2 teaspoons soy sauce, ginger and pepper flakes in small bowl, set aside.
 
Heat remaining oil in a large nonstick skillet over high heat. Add chicken and 1 teaspoon soy sauce. Stir fry chicken until no longer pink. Add veggies and stir fry until tender crisp, about 3 minutes.
 
Add marmalade mixture and sprinkle lightly with white pepper.  Heat 1 minute, stirring occasionally. Serve over prepared Skinny Dip Rice Pearls.

Tuscan Tuna PomadoroServes 2
 
1 bag Skinny Dip Fettuccini, or any shape
5 oz can tuna packed in water, drained & flaked
1 cup canned diced tomatoes, drained
1/2 stalk celery, finely chopped
8 medium green olives, quartered
2 cloves garlic, finely chopped
1 green onion, sliced thin (white part separated)
2 teaspoons olive oil
1/2 teaspoon dried Italian seasoning
1/8 teaspoon pepper
seasoned salt to taste 
 
Heat oil in a small nonstick skillet over medium heat.  Cook celery, white part of green onion and garlic for 2 minutes.   Stir in tuna, tomatoes, green onion tops, olives and pepper. Cook 5 minutes, then add seasoned salt to taste.  Drain and boil noodles 1 minute.  Drain again very well and arrange on plates.  Spoon tuna mixture over the top and serve.

Ginger Sesame Noodles & ChickenServes 4

2 bags Skinny Dip Angel Hair or Fettuccini 
3/4 lb boneless chicken breast, cut into thin strips
2 cups shredded Napa cabbage
2 green onions, chopped into 1" pieces
1 cup fresh sliced mushrooms
4 cloves garlic, minced
1 tablespoon fresh grated ginger
2 tablespoons sesame oil
2 tablespoons corn oil
1/2 teaspoon pepper
1/3 cup soy sauce
 
In a large bowl combine the soy sauce and sesame oil.  Drain, rinse and boil noodles 1 minute.  Drain again very well and dab with paper towels to dry, then add to the bowl and toss to coat, let sit.
 
Heat corn oil in a large nonstick skillet over high heat until rippling. Sprinkle chicken generously with salt and pepper, then add to the skilletand stir fry until golden, 3-4 minutes.
 
Add cabbage, green onion, mushrooms, garlic and ginger and cook 2 minutes. Season generously with salt & pepper and keep warm.  Add noodles to the skillet and toss to mix everything.  Cook 2-3 minutes or until noodles are hot, then serve.
