Gluten Free Chicken Noodle SoupServes 4
1 bag Skinny Dip Angel Hair, or any shape
6 oz cooked chicken breast, cubed
3 cups gluten free chicken stock
2 ribs celery, sliced
2 cups raw spinach, chopped
2 cloves garlic, minced
1/2 medium onion, diced
2 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
Heat oil in a large saucepan over medium heat.  Add onion and garlic and cook until soft, about 10 minutes.  Add carrots, celery and pepper flakes. Cook 5 minutes, then stir in chicken stock and cook 15 minutes. Add noodles and cook 5 minutes.  Season to taste and ladle into soup bowls!
