Serves 6
3 bags Skinny Dip Rice Pearls
8 oz Farmer John sage sausage
3/4 cup shredded part skim mozzarella cheese
1 cup sliced mushrooms, rough chopped
3/4 cup diced celery
1/4 cup diced onion
2 tablespoons chopped walnuts
1 tablespoon diet margarine
2 teaspoons poultry seasoning
1 teaspoon chicken broth granules
1/2 teaspoon salt
1/4 teaspoon black pepper
Drain and rinse rice pearls. Drain and dab with paper towels to dry and place in a mixing bowl.
Brown sausage while breaking it apart with a spatula Add to rice pearls and sprinkle with poultry seasoning. Toss to mix evenly and let sit to absorb flavors.
Melt margarine in a large nonstick skillet. Add broth granules, celery, onions & mushrooms and saute 3 minutes. Add walnuts, rice pearls, salt and pepper. Cook 5 minutes or until liquid has evaporated. It should be fairly dry.
Sprinkle with cheese and stir to mix. Cover and let sit 2 minutes to melt and firm up before serving.

this is even good with chicken sausage or leftover roast beef (just add some extra spices). very good for a diet side dish and i’m saving this recipe.
Was pretty good with chicken in the middle of the week. The cheese really does hold it together. Might try different spices next time and add chicken sausage.
WE MADE THIS WITH COOKED RICE AND IT WAS GOOD BUT MY MOTHER IN LAW MADE SOME WITH HER SKINNY NOODLES AND SAID IT WAS VERY GOOD.
didn’t have any rice pearls so i chopped up the skinny dip angel hair into small rice-pieces. turned out good.
