Pasta and Parmesan ShrimpServes 2

1 bag Skinny Dip Linguine, or any shape
1/4 lb medium shrimp, cleaned (or chicken)
1/2 cup chicken broth
2 tablespoons cream
2 tablespoons Parmesan cheese
2 cloves garlic, minced
1 tablespoon chopped green onion tops
1/4 teaspoon fresh lemon zest (optional)
2 tablespoons diet margarine
2 teaspoons oil
1/8 teaspoon black pepper

Drain, rinse and boil noodles for 1 minute.  Drain again in a colander and dab with paper towels to dry well.

Heat oil in a medium nonstick skillet over medium heat and saute garlic 1 minute. Add chicken broth, cream, Parmesan, margarine, green onion, salt and pepper. Reduce heat and simmer until liquid is reduced by 1/2.  Stir in lemon zest.

Add shrimp and cook 2-3 or until shrimp is barely opaque.  Stir in noodles, toss to coat and cook 3 minutes or until heated through.
